Basic Muffins

Ingredients:

1 c Whole-wheat flour
2 ts Baking powder
1/4 c Honey
2 c Water; or nut milk
2 tb Applesauce
1/2 ts Vanilla
1 c Cornmeal

Instructions:
Combine dry ingredients. Combine wet ingredients. Fold dry and wet ingredients together, until just moistened. Spoon into lightly oiled or non-stick muffin tins. Bake at 350 degrees for 30 minutes.

Fresh Apple Muffins – Diabetic

Ingredients:

2 tablespoon soft margarine
2 tablespoon sugar replacement
egg (beaten)
1 1/4 cup flour
1/4 teaspoon salt
2 teaspoon baking powder
6 tablespoon skim milk
apple (peeled and chopped)

Instructions:

1 c Unbleached flour
2 tb Unbleached flour
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1/2 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Cloves
1/8 ts Ginger
12 ts Granulated sugar
2 tb Applesauce — at room temperature
1 Egg white — whipped
1 ts Vanilla
1/2 c Pumpkin
1 sm Apple — peeled/shredded
